Low-Carb Bean Salad

A few weeks away from Spring which means Summer is around the corner.    Hmmm….time to shed those extra pounds that come to visit me every winter. 😉  I am not one to diet, no way, not me, not gonna happen! I love food way to much to diet.  I mean that’s just crazy talk!  I write a food blog for heavans sake!!!  But, what I do…do is I start to eat less and cut back on the grains.   I am sure many of you are doing the same, so, I thought I would share one of my favorite skinny side dishes.

1 Can of Small White Beans (or your favorite)

1 Cup Broccoli Chopped

3/4 Cup Sweet Peppers Diced (I used red, yellow, and orange)

1/2 Cup Red Onion Diced

2 Stalks of Celery Diced (including the leaves)

4 Sprigs of Cilantro Chopped

Dressing:

1/4 Cup Cider Vinegar

3 Tablespoons Water

2 Tablespoons Olive Oil

Salt to Taste

Combine all ingredients and toss.  That’s all.
